Try This: Pumpkin Mousse Parfait

1/4 cup reduced fat cream cheese
1 package (small box) vanilla instant sugar-free pudding
3/4 cup skim milk
1 can (15 ounces) solid packed pumpkin
1 tsp. cinnamon
1/2 tsp. ginger
1/8 tsp. ground cloves
3 cups light whipped cream
4 crushed gingersnap cookies

  1. Beat cream cheese until smooth. Add pudding, milk, pumpkin, and spices and beat until smooth. Fold in 1-1/2 cups whipped cream.
  2. To assemble, spoon 1/4 cup mousse into eight glasses. Spoon 2 tablespoons whipped cream on top of mousse. Add another 1/4 cup mousse. Finish each glass with a dollop of whipped cream and 1 to 2 teaspoons gingersnap crumbs.
